Middle of the week. Feeling a little blah, looking for a treat? Well I’ve got one for you!
Chocolate chocolate chip cookies!!
Heat your oven to 350 degrees and line a couple of cookie sheets with parchment paper.
Get yourself some quality chocolate, about 1/2 cup, my favorite is Lindt 70% coco or some good baking chocolate and chop it up into fairly small pieces so it will melt quickly and evenly.
Make yourself a double boiler by placing a bowl over a pot of water that is on a very slow boil, add the chocolate and let it melt down.
Once the chocolate has melted to a velvety cream, take it off the heat.
Meanwhile, in the mixer, using the paddle attachment, cream together:
- 1 stick ( or 1/4 of a pound) of unsalted butter
- 1/2 cup light brown sugar
- 1/2 cup regular white sugar
