We had some of that quinoa pudding left over and I felt that it’s the kind of thing that tastes best when freshly made, so what to do with the left overs?
Why not make quinoa crepes??
I also had some fruit sitting around that was bit over ripe so I chopped it all up and tossed in a pot, added some agave syrup, but you could add regular sugar or the sweetener of your choice. I also added some fresh lemon juice and some lemon zest.
Then in a blender or mixing bowl add:
- left over quinoa pudding
- 1 cup of flour of your choice ( crepes don’t need to rise so any will do)
- 1 cup of milk ( dairy or other)
- 1 egg
- juice of half a lemon
- 2 tbsp of sweetener ( sugar or other)
- 1 tsp vanilla
- pinch of salt
Whiz or mix that up and let sit a minute or two.
Meanwhile fire up your biggest, flattest fry pan. Unless of course you are lucky enough to have a crepe pan!
When hot, add a dollop of butter, whirl it around to cover the surface, then add 1/4 to 1/2 cup of batter depending on size of your pan. Then QUICKLY whirl the batter in the pan till it is flat as possible.
Let cook till you see the tell tale bubbles start to form and then turn it over. Good luck with this part. If you are fancy, you can flip them in the air, but if you are like me, just use your biggest, flattest spatula to flip em.
It will only take about a minute on the other side then fold it in three and put it on the serving plate.
Put a spoonful or two of the cooked fruit and decorate at your discretion.
I added a little sifted powdered sugar and a couple of drizzles of chocolate sauce!
Who KNEW how easy this one was! I wasn’t even planning on a dessert, just whipped this up way after dinner cause the Chef was jonesin for somethin sweet!
