Forbidden Muffin Balls

Okay, healthy eaters, you may want to avert your eyes from this one.  No good will come of it.But if you want to take a little walk on the wild side, you might want to give this one a little try!

Have you ever found yourself stuck with left over muffins?  I don’t mean the healthy whole grain ones you made yourself.  I’m talking about those sickly sweet ones that often come in large quantities from a box store, the kind that are left over after a board meeting or some other forced breakfast gathering?

Well here is something to do with them.

If they are the big honken ones, you will cut them in four, if smaller, then cut accordingly.

Then get three dishes that you will use for dredging.

  • First will have flour, sugar and cinnamon
  • Second will have beaten egg with sugar and cinnamon
  • Third will have shredded coconut

Take you piece of muffin and like a bad little kid who plays with their food, squish it up and roll it in a ball and tight as you can.   Then roll it in the first dish of the flour, sugar mixture to coat it.  Then from there roll it in the egg mixture for maximum “stickage”.  Then finally roll it in the coconut.

Place them on a cookie sheet with parchment paper on it and put them in the freezer for a minimum of 2 hours, but over night is best till they are good and frozen.


When you’re ready to make them, either get out your deep fryer ( I don’t know too many people who have their own at home, but if you do please use it!) or a deep-frying pan with about  1/2 inch of neutral (vegetable or the like but not olive) flavoured oil and heat.

Then take your muffin balls out of the freezer and ever so CAFEFULLY drop them into the oil and fry on all sides for about 30 seconds.  Just enough to put a nice crust on the outside, while the inside remains cold.  Kind of like a deep-fried ice cream type scenario.

Drain well  on paper towel and they are ready to eat.

Now you can sprinkle them with powdered sugar or drizzle with caramel or chocolate sauce!

Lemon poppyseed, blueberry, plain and cranberry, see, you can still see the muffiny goodness inside!!
