Good things to eat

One of the guests  coming to the pasta party has a strong affection for the crispy cheese bits left on the tray after broiling some other dish with cheese on it.  We thought why not accommodate with actual bits of crispy toasted cheese on purpose?

They are really very easy and quite versatile.

All you need is a baking sheet and some parchment paper ( I rarely cook without it!!) and heat your oven to 350 degrees.  Drop a few handfuls of grated parmesan cheese strategically on to the paper.

Then put the tray in the oven on a middle rack for no more than 3 to 4 minutes keeping a close eye on them because they will quickly burn.

Once the cheese comes out of the oven you need to move quickly with it.  Gently lift the toasted cheese with a spatula or just peel it away from the parchment.  Quickly place it onto a clean tea towel, or sheet of paper towel but be careful because at this point it is super hot.

With the towel between your hand and the cheese, flip the cheese over onto the mould.  I my case I just used and upside down muffin tin, squeeze the cheese over the mould, forming a cup.

The after 30 seconds to a minute you are ready to remove your cute little toasted parmesan cheese basket and use as you please!   You also just leave them flat and use them as a chip like garish.
